Oatmeal Creme Pies
We were curious how oatmeal creme pies would taste with marshmallow creme, and OMG what a winner!
Cookie recipe adapted from Beaming Baker.
11 Ingredients
- 1 cup rolled oats
- 1 cup oat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup + 2 tablespoons melted coconut oil
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 2 eggs (can sub with flax eggs for egg substitute)
- 1 teaspoon vanilla extract
- Funky Mello marshmallow creme
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, whisk together the oats, oat flour, baking powder, baking soda and salt.
In a large bowl, whisk together the coconut oil, coconut sugar, maple syrup, eggs and vanilla.
Add the dry ingredients to the wet ingredients and whisk until thoroughly combined.
Using a medium cookie scoop, scoop cookie dough onto the prepared baking sheet and gently flatten cookies into a round disc.
Bake for 8-12 minutes.
When done, carefully transfer cookies to a cooling rack and allow to cool completely.
Scoop 1 tablespoon of creme onto a cookie, lightly cover with another cookie to make a sandwich, and repeat with the rest of the cookies.
